What's the best way to change things up for homeschool? Field trip!!! Today, the kids, and I explored our local community, the Will Rogers Birthplace, and the Will Rogers Museum. It was a great way to freshen things up, explore, and learn about what make our little town special. It's also these kinds of days that I want to come home to a meal that is easy to serve because I am usually exhaust. One of my favorites is, chicken noodle soup.
All the prep work is done in the morning, and slow cooks all day, leaving just the noodle to add at the last minute. All I do is sauté one chopped onion until translucent in one tablespoon of butter, adding the three chopped carrots, one cup of chopped celery, one tablespoon of rosemary, one tablespoon of basil, and one teaspoon of thyme. Once things begin to get tender I add a half a cup of rice wine vinegar. Letting the flavors infuse together for five minutes I add 2 32 oz boxes of chicken stock, and 4 cups of water. Adding 3 chicken breasts I let the soup cook slowly all day. I add whatever box noodles I have in the house 30 minutes before we want to eat. Serve just as is, or you can add a spoonful of a ricotta parmesan and parsley mixture on top.
Being able to let something cook all day, and go about the business of motherhood, makes all the difference. It helps make my day less stressful, allowing me to really enjoy my time with my family. Having a bowl of delicious soup that makes you feel all cozy on a beautiful fall day, is just the cherry on top to a wonderful day.
