Tomorrow we are throwing a homeschool fall bash. So, my day has been busy getting things ready to go. We will have all kind of fun things to do, which you will find out tomorrow. Being so busy, I forgot to lay anything out for dinner. I needed a meal fast and couldn't afford to order fast food. What do I do? Well, I make a quick veggie lasagna, that's what.
I looked in my fridge and pantry finding lasagna noodles, pasta
sauce, ricotta cheese, spinach, and parmesan cheese. I got a 13x9 in. pan and sprayed it with oil. I dumped 1/2 in. layer of pasta sauce on the bottom, 3 lasagna noodles, 1 in. layer of ricotta cheese mixture, another noodle layer, the rest of the sauce, and topped it off with fresh mozzarella cheese. I cooked it in the oven at 400°F (205°C) for 1 hour and 10 minutes.
Meals like this, make it easy for me to continue to work while getting a delicious meal out on the table. Come back tomorrow and see what fun things we do with some of our homeschool friends.
