Spicing It Up!


One of my all time favorite soups, is Tortilla soup! My mom made it for me a lot when I was a kid, and it is now one of my kids favorite meals as well. All you need is one onion, three jalapenos, three cloves of garlic, tomato juice, chili powder, cumin, worcheshire sauce, chicken, one box of beef broth, and one box of chicken broth.


I first chop the onion, and jalapenos sautéing them in a little vegetable oil. As soon as the onions become translucent, I add a small can of tomato juice, two tablespoons of chili powder, cumin, and worcheshire to the pot. I let these flavors simmer for about five minutes to incorporate together. Then, I added the 32oz boxes of chicken broth, and beef broth. I add three chicken breasts next, and let this slow cook for 4 hours.


After about 3 hours I taste test the soup, adding salt as needed. When it's time to eat we serve this with monterey jack cheese, tortilla chips, and (if we have them) chunks of avocado. It is so good!
