Recipe Challenge 3

I almost completely forgot to tell you all how my recipe challenge went last month! Better late than never, I guess. We made our Chipotle burrito bowl while camping a couple of weeks ago. It was a perfect meal for camping, and so easy. I used steak instead of Ground beef because that is what our family prefers.


Because we were camping, I sliced up the skirt steak into small slithers and marinated the meat for 2 days with olive oil and the Pampered Chef Chipotle seasoning. I like marinating my meat at least two days so it can really soak up the flavor and get good and tender.


We grilled up the steak along with some bell peppers and onions. While the steak sizzled on the grill we prepared the white rice. We squeezed 1 lime, a teaspoon of garlic powder, and a small handful of cilantro to the white rice. We chopped up some fresh tomatoes, onions and lettuce. One of the people who camped with us provided fresh homemade salsa. It was so good!


The nice thing about this meal is you can serve it buffet style and everyone can make it unique to their own taste. For myself, I like to have my cilantro rice as the base, then I top it off with black beans, steak, salsa, sour cream, shredded cheese, tomatoes, onions. I mix it all together and enjoy each delicious bite. This meal is so good we will making it often in this house hold. I strongly recommend this recipe.
