Recipe Challenge #2

I am apart of this Tastsbuds subscription with Pampered Chef. I have really enjoyed it because it pushes me out of my comfort zone. Having the spices sent to me has forced me to try new things and I am loving it! To make things more fun, I have created a VIP community group on facebook. There, I have started a recipe challenge. I figured it would be fun to try some of these new recipes with the people I hang out with on facebook.


Tonight, the challenge was Carolina Barbecue Salmon. Ok, now when I opened the spice bottle it smelled strong. It kind of had a hint of vinegar which made me slightly nervous, because I am not a huge fan of the salt and vinegar flavor. To force myself to try it I decided to make it the recipe challenge for the month.


I live in Oklahoma so I had to buy the frozen salmon filets. I got them thawed and pat them dry. Then, I snapped the ends off of the asparagus and placed them on the large cookie sheets. Now, I put foil on the cookie sheet to make for easy clean up and sprayed it with cooking spray. (life is always easier when the clean up is easy) I added the South Carolina-Style Barbecue Rub to the olive oil and I basted the salmon filets after placing them on on the cookie sheet along with the asparagus spears. I basted the asparagus with the little bit of olive oil I had left. I added salt and pepper to taste.


I cooked this meal in a preheated oven at 325℉ for 25 minutes. It was so easy and made very little mess. If every meal could be this easy I would be a happy woman. To top it all off the sauce on top made the dish even better. All it had was oil, mayo, South Carolina Barbecue Rub, and lemon juice. This dish was light, savory, and delicious. I am so glad I tried it. Even though my senses told me the flavor would be strong, it wasn't. It had just the right amount of acid that balance the richness of the dish.
