Homeschooling, and a mom of three, I am always a fan of those easy meals. I want it to be delicious, making one feel as though you spent hours in the kitchen. That isn't always the case, but tonight's meal sure was. Burritos are one of those meals both adults, and kids just love! Tonight's burritos had a special twist that elevated the dish.
Yesterday, I made a pork green chili. It's that kind of chili that can be used in multiple meals either as the star of the show, or the brilliant supporting role. It is made up of green chilis, rotel, tomatoes, garlic, onion, chicken stalk, and chunks of pork chop. It's a fresh, yet comforting dish, that I love to eat in a bowl topped with some cheddar cheese, and sour cream.
When I make my green chili a make enough to use multiple ways for at least 3 meals. It helps make quick, and easy meals extremely flavorful. To make our burritos even more wonderful, I added skirt steak to the party.
I marinated the steak in 1/4 cup of worcheshire sauce, and 1 Tbls of montreal steak seasoning, for half an hour. When the 30 minutes were up I got a pan, and slowly warmed up a small amount of the leftover green chili. I seared the steak on both sides for approximately 3 minutes on each side in an iron skillet with melted butter. After the steak cooked on both sides, I let it rest on a cutting board for 10 minutes. Then, I warmed up the refried beans in the skillet I cooked the meat in, adding 1/4 cup of the green chili to add depth of flavor. When the beans got hot, I cut the steak into cubes, and began to build the burritos.
My kids loaded their burritos with beans, steak, cheese, and sour cream. Letting them get hands on to build their own plate, helps them get excited about what they are about to eat. Mine of course was topped off with the delicious leftover chili, and a little parsley. This meal took maybe 20 minutes to make, and it was delicious! You can always use store bought tortillas or make your own, either way, it will leave smiles on your families faces.
