One of my favorite things to do, is surprise my husband with a special treat when he gets home from work. Tonight's special treat is a Pistachio White Chocolate Cookie. This is my first time making this cookie and it was beyond a success. I will be making these cookies over and over again. There is a crunch, suttle saltiness, and creaminess all in one cookie. It isn't overly sweet which can be a good, and bad, because it's hard to stop eating them.
What you will need if you want to try for yourself is:
1/2 Cup unsalted butter
2 Cups of flour
1/2 Cup sugar
1 Cup light brown sugar
1 1/2 tsp baking soda
1 tsp Vanilla
1 tsp salt
2 eggs
1 bag of white chocolate chips
1 Cup of crushed pistachios
You will want to preheat your oven to 375°F. In a stand mixer bowl, add all the ingredients except for the eggs, white chocolate chips, and pistachios. Begin mixing the ingredients on a low setting, while adding the eggs one at a time. When the dough is creamy add the white chocolate chips and the crushed pistachios.
Roll the dough into small balls and place evenly on a greased cookie sheet. Cooking the cookies for 8 minutes. We like ours to be more gooey, so if you like you cookie more cooked than that, I would go 10 minutes.
