As a mom, there are those days that get away from you, and there is no time to make dinner. One of my favorite places to go is Taco Bell. My middle daughter, and I, absolutely love the mexican pizza! With Taco Bell no longer making them, I of course had to figure out how to make it at home. It's not as easy as going through a drive through where it's already made for you, but for my daughter and me, it's worth it.
All you need is corn tortillas, 1 can of enchilada sauce (I use the Old El Paso, red enchilada sauce), refried beans, 1 pound of ground beef, 2 tomatoes, cheddar cheese, 1 Tbls of butter, vegetable oil, chili powder, and taco seasoning. In a skillet I warm up about a cup of vegetable oil. I keep my stove at medium high heat. While that heats up I chop up my two tomatoes. When the oil is ready, I place two corn tortillas in the hot oil. I let them fry until they are golden brown so that there is a perfect crisp to them. I let the tortillas cool on a cooling rack while I get the rest of the ingredients ready to go.
In a saucepan I sauté half of the chopped tomatoes in a tablespoon of butter. When they have cooked, for about 5 minutes, I add the enchilada sauce, and 1/2 Tbls of chili powder to the pan. Let this simmer until it is time to serve.
Next, I get the refried beans in a pan to warm up on low heat. As that warms, I put the ground beef in a skillet, and begin to brown the meat. I sprinkle taco seasoning (to taste) to the meat for some extra flavor. When the meat is cooked, it is time to put together the pizza.
I put one of the fried tortillas down on the plate. I spoon out some beans and meat spreading it out evenly on the tortilla, topping it off with another fried tortilla. I ladle out a scoop of the yummy red sauce, and top off with some cheddar cheese, and fresh tomatoes. It's that simple, and delicious!
