Light Weight

I absolutely love the comforting foods that make you want to cuddle up, and savor each bite. For me, what makes those dishes even better, is breaking it up with lighter dishes. They still leave your mouth watering with delight, but doesn't put you into a food coma.


Tonight my family made a simple dish that was gone in a matter of seconds. My kids devoured this dish like it was about to sprout legs, and run away. My kids are not picky eaters, so it makes me feel extra happy when they love it so much it practically disappears.


Tuna steak with a side of asparagus, is one of my all time favorites! It only takes 15 minutes to get this dish cooked, and served. I prepped all my ingredients before cooking. This allowed me to get everything in the pan at once, so they both finished cooking at the same time.


I coated my tuna steaks with Everything Bagel Seasoning, and set aside. Then, I popped the ends of the asparagus off, and put the ends in my compost pile. I got two skillets out, and began heating them on the stove. I put 1 tablespoon of butter in one, and 1/2 cup of veggie oil in the other. When the butter had melted, I added the asparagus to the pan seasoning with salt, and pepper. I kept the pan on medium high heat. At that point, the vegetable oil was plenty hot for the tuna. I placed each steak into the pan. I seared the steaks on each side for roughly 1 to 2 minutes, depending on the thickness of the steak. Occasionally, I would toss the asparagus around in the pan, making sure they were cooking evenly. I prefer my asparagus to have a slight crunch to it, so I basically cook the asparagus to a beautiful green color with a slight char to it.


Once the tuna has cooked on all sides, I put the steaks on a platter to let them rest. I toss the asparagus around to see if it is done, and place them on the same platter. I drizzle the final elements with a couples slices of lemon, and then serve. It's fresh, delicious and leaving your taste buds satisfied, and your stomach happy.
