Left Over's Made New


Earlier today, I posted on facebook to keep an eye out for todays post. Well here it is! As a family of five, it can get expensive to feed all those hungry mouths. With the weather cooling down, I can cook savory comfort foods that can be used for multiple meals. For example: Coconut Chicken Curry

This is a favorite in our home, and we can roughly get four different meals out of one batch. The problem is, my family tends to get tired of eating the same thing over and over. Freezing it is an option, however, with the last portion I decided to get creative. I have seen so many people turning ramen noodles into something beautiful, and not the normal "I'm broke" ramen noodle. I used that as inspiration for tonights dish. I took the noodles from the ramen packet, and stored the seasoning packets in a cabinet for another use. I was able to scoop out 2 cups worth of left over curry, adding it to 2 cups of water in a medium size pot. I brought the curry to a boil, then added the ramen noodles. I cooked the noodles to my desired tenderness, and removed it from the heat. I plated the noodles and topped them with chopped green onion, lemon, and a pinch of paprika. Just like that my kids were excited about dinner again, and it only took me 10 to 15 minutes to whip up. Mom for the win!
