Today was one of those days. You know, the kind of day you just feel spent, and not motivated at all to do anything. Figuring out what to make on those days is just...... well...... challenging.
I was sitting on the couch watching some Gilmore Girls, looking at pinterest on my phone. When it hit me! Mexican Casserole! I had to improvise slightly, because I didn't have all the original ingredients I would purchase for this dish. Turns out, improvising can be quite delicious.
I had 1 pound of ground beef, 1 can of Charro Beans (seasoned with bacon, chicharron, and chorizo), 1 cup of crushed tortilla chips, 1 cup of leftover rice in the fridge, 1 cup of salsa, and cheddar cheese for the top (I'm not giving an amount because some like less cheese and some like a lot).
All I do is cook the ground beef with taco seasoning, and preheat the oven to 375°. Once that is cooked, I put all the ingredients into a mixing bowl and mix it together. Dump the concoction into a casserole dish and top it off with the cheddar cheese. Cover and cook for 45 minutes. I then remove the covering, and cook for another 10 minutes. Just like that, I have a meal for my family that is delicious, and crazy easy. Be blessed, and don't let those blah days get you down.
