Tonight was a cold and rainy evening. I wanted something warm, comforting, but not heavy. I had some homemade broth from a crab leg boil, some heavy whipping cream, clam sauce, and tomato paste. I decided to try my hand at crab bisque.
I got a pot on the stove and melted two tablespoons of butter in it. I chopped one onion into fine pieces, and sautéd them in the butter. The broth had a whole head of garlic in it when we cooked the crab originally so, I didn't add any garlic with the onions. I added three tablespoons of tomato paste, one teaspoon of thyme. After the paste had cooked for a little while, I added one half cup of sherry wine to the pot.
I allowed the alcohol to cook off before adding the broth, and clam sauce. I bring the soup to boil, and let it cook for roughly ten minutes. I thicken the soup with flour, and let it cook for another five minutes. Right at the end I added a half cup of heavy whipping cream, and tasted the mixture, adding salt if needed. When the flavors satisfied my tastebuds I added a dash of parsley to the pot, serving the dish with toasted bread. It was delicious, and very satisfying.
