Holiday Baking And A Delicious Meal!

Who doesn't make lots of yummy treats at Christmas time? Our family sure does! This year I decided to try a new recipe, and added to our array of tasty treats. I made raspberry jam cookies, and my version of a PB&J cookie.


The PB&J cookie was a huge hit with my husband. I made a classic peanut butter cookie, and instead of pushing it down with a fork, I shaped them into little bowls. Then, I put a decent portion of raspberry jam in the cookie bowls. I cooked them in a 350°F oven for 8 minutes. It's the perfect little snack for those pb&j sandwich lovers.


For my classic jam cookie I used a shortbread cookie recipe I found on pinterest. Shaped them into bowls, and put a decent portion of raspberry jam (you can use any jam flavor you want) in them. I cooked them for 20 minutes in a 325° F oven. They turned out scrumptious. They are my favorite because they are not too sweet, and I love the slight tartness from the raspberry.


For dinner I made air fried chicken, in my Pampered Chef Air Fryer, served with green beans, and fried potatoes. For the chicken I marinated 4 chicken thighs in some Olive Garden salad dressing for 30 minutes. For the filling I mixed half a block of cream cheese, 1/8 cup of parmesan cheese, 1/8 cup of Feta cheese, and 2 Tbls of chopped green olives. I rolled the chicken up with the cream cheese filling holding it together with toothpicks. I seasoned the chicken with salt and pepper, and cooked in the airfryer for 20 minutes. It was soooooooo good! I strongly recommend trying it.



I know this season has been a difficult one for everyone. So, take this time as a family, and come up with special treats that brings a smile to your hearts. These kind of treats become extra special because good memories are built from them. Be blessed my friends, and know that God is with us all. He will see us through!
