30 Minute Meal

Today was an exhausting day. Our grocery store had a huge meat sale, so of course, we had to take advantage. With a family of five, getting the amount of meat we need can get expensive. Taking advantage of these sales, can make all the difference. On top of that, we had to do homeschool, and of course get some cleaning done.


What makes a mom feel better after a long, busy day? A meal that only takes 5 minutes to prep, and 18 minutes to cook. Tonight I made a chicken roll-up. First, I made the filling. I mixed 1 cup of ricotta cheese, 1 Tbls of parmesan cheese, a little salt and pepper, and set it aside. Next, take two chicken breasts, and cut them into 4 thin pieces. I cover the chicken breast with greek seasoning, put a layer of the ricotta cheese mix on the chicken and roll it up. Using cooking string, I tied the chicken closed. I cooked my chicken in my Pampered Chef air fryer, on the roast setting, for 18 minutes.


I served it with baked beans, and sweet tea. It's simple, yet delicious. I love quick meals, because they make my life easier, and less overwhelming. I have been trying to make meals that are healthier for us, and it's a plus when they taste really good.
